Australian wine has been short for some time. The shortage is due to extremely limited water availability resulting from drought. But the 2008 vintage came in well above expectations at 1.83m tonnes, 31% higher than 2007, despite some of the strictest water restrictions ever seen. So how did we produce so much wine with so little water?
